Furikake Salmon Bowl

Ingredients

  • 3 tbsp soy sauce

  • 3 tbsp Mirin 

  • 1 tbsp sesame oil

  • 2 tbsp olive oil

  • 2 bunches of bok choy

  • Pinch of salt

  • 2 pieces of salmon

  • Cooked Japanese rice

  • Sliced avocado

  • Furikake

  • Cooked edamame

  • Other prefered toppings

Background

This is a Japanese-Fusion dish centred around salmon and flavoured by the addition of furikake. Furikake is a Japanese seasoning that most commonly includes sesame seeds, nori, salt and is used to flavour rice.​ This dish is healthy, contains multiple greens, and allows for adjustment. Feel free to change ingredients to suit your personal liking. Enjoy!

Rice

Set the rice to cook.

Sauce

Mix soy sauce, mirin, sesame oil and 1 tablespoon of olive oil in a bowl to make the sauce.

Bok Choy

Boil the bok choy for 1 minute. Set aside.

Salmon

Season the salmon with salt and heat 1 tablespoon of olive oil in the pan over medium-high heat. Sear the salmon until both sides are golden.

Assembly

Divide rice between 2 bowls and sprinkle them with furikake. Arrange bok choy, avocado wedges and edamame in the bowl. Top with salmon and sprinkle it with furikake, spooning the sauce over the bowls.

Serve immediately!
