Apfelkuchen
Apfelkuchen, or German apple cake, consists of a single layer of buttery cake topped with rows of sliced apples.
CAKE
1/2 cup butter
3/4 cup sugar
1 egg
2 cups flour
2 1/2 tsp baking powder
1/4 tsp salt
1/2 soy milk
3 or 4 baking apples
TOPPING
1/2 cup sugar
1/2 cup flour
1 tsp ground cinnamon
1/4 unsalted butter
1 tsp almond extract

Preheat oven to 177C (350F)
Butter and flour a 9x13 dish
Cream butter and 3/4 cup of sugar until light and fluffy.
Add the egg and beat well until incorporated

Whisk together the two cups of flour, baking powder and salt in a separate bowl.

Add the flour into the butter mixture in three additions, alternating with the milk.
Beat just until incorporated, scraping the sides of the bowl after each addition.

Spread the batter on the bottom of the buttered pan.
Peel, core and slice the apples.

Mash the butter into the topping with a fork or with your fingers. Mix in almond extract, break the topping gup so it's nice and crumbly and sprinkle it evenly over the apples. Bake for 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean. Cool for at least 30 mins before dividing into rows of slices.
